Lentil and Custard Apple Bake
Ingredients
- 2 cups cooked noodles
- 1 cup canned brown lentils
- 1 onion, diced
- 3 eggs
- 6 tablespoons sour cream
- 1 tomato, diced
- 1 custard apple
- 1 teaspoon salt & pepper
- 2 teaspoons nutmeg
- 2 teaspoons butter
Method
Fry onion until soft. Beat egg,cream,salt,pepper and nutmeg together.
Mix custard apple pulp, noodles, onion, lentils,tomato and butter together in a 3 pint ovenproof dish.
Pour the egg mixture into the dish and bake at 220C for 30 minutes.
Serve with a fresh herb and vegetable salad.
