Jade SymphonyIngredients

  • 1 medium custard apple
  • 1 teaspoon lemon juice
  • 500 whipping cream
  • creme de menthe liqueur6 meringue nests, ready-made or home-made

Method
Remove seeds and blend the custard apple flesh with lemon juice.
Place in freezer until mixture begins to set.
Whip cream and fold lightly into semi-frozen custard apple.
Re-freeze. Transfer to fridge 30 minutes before serving to soften a little.
Scoop mixture into balls and place in meringue nests. Pour liqueur over and serve.
